These chewy and flavorful rice cereal treats feature the rich taste of brown butter combined with almonds, goji berries, and coconut flakes. Perfect for a snack and can be frozen for later enjoyment.
1. Line a 9x9-inch baking pan with parchment paper, leaving a little overhang on the sides for easy removal. Lightly grease the parchment.
2. In a large pot, melt the salted butter over medium-low heat until some brown bits start to form. Add the large marshmallows and stir until completely melted and smooth. Remove from the heat and stir in the vanilla and salt.
3. Add the brown rice cereal, toasted almonds and coconut, goji berries, and 1 cup of the mini marshmallows. Fold everything together until evenly coated. Letting the mixture cool for just a minute before adding the mini marshmallows helps keep some of them intact and extra gooey.
4. Transfer to your prepared pan and gently press into an even layer. It will help if your hands are a little bit wet with water so they don’t stick. Don’t pack them down too firmly - you want them chewy, not dense.
5. Let cool at room temperature for about 30 minutes before lifting from the pan and cutting into squares. Once completely cooled, cut into individual squares and wrap each one tightly, then store together in a freezer-safe bag or container. Freeze for up to 2–3 months. When the craving hits, pull one out and let it sit at room temperature until soft and chewy again. For that extra-gooey, just-made texture, you can also give it a very quick warm-up in the microwave. Enjoy!!
