Goji Berry & Jujube Tea

Add the jujube dates, hawthorn berries and water to a large pot. Bring to a boil, then reduce the heat and gently simmer for 40 minutes. Add the goji berries and continue simmering for another 20 minutes, for about 1 hour total. Strain the tea and sweeten with a little honey to taste. Pour yourself a mug while it’s still warm, then let the remaining tea cool completely.

Storing & Thawing: Pour the cooled tea into silicone ice cube trays and freeze until solid. Transfer the cubes to a freezer-safe bag or container for longer storage. When you want some, add a few cubes to a deli container and let them thaw overnight in the refrigerator. Keep the thawed tea refrigerated and reheat a mug at a time, or drink it chilled.
