Afterglow Sour Mocktail

1. Chill your glasses in the freezer.
2. Prepare your hibiscus tea: brew it, then add ice and stir to cool it down, and chill it further in the freezer while you make the simple syrup.
3. To make the mint simple syrup, add sugar, water, and fresh mint leaves into a saucepan. Bring to a boil, then reduce heat and simmer for about 15 minutes until it thickens. Strain the syrup into a jar and chill it in the fridge.
4. Make your drink by adding the mint simple syrup, raspberries, lemon juice, cold hibiscus tea, water, and egg white (or aquafaba) to a shaker.
5. DRY shake the mixture for 30 seconds (this helps create froth from the egg white).
6. Add ice to the shaker and shake for an additional 30 seconds.
7. Strain your drink into the chilled glass, top with a few extra raspberries for garnish, and enjoy!
