Black Sesame Horchata with Activated Charcoal Cold Foam
15 mins prepServes 4
This spooky take on a classic horchata features a rich black sesame flavor and is topped with an activated charcoal black cold foam. It's a delicious and essential drink to have on hand!
The day before you plan to serve, add rice, cinnamon stick, cardamom, and water into a pitcher. Cover and let soak overnight in the fridge. The next day, add everything (including the soaking water) to a blender and blend for 1 minute. Then, strain the mixture 3-4 times until all of the rice, etc., has been removed. Add your strained horchata back to your blender with non-dairy milk, maple syrup, vanilla, and salt. Blend until smooth. Add back to your serving pitcher and pour over ice!
To make the cold foam, whisk heavy cream, activated charcoal (optional), and 1-2 teaspoons of maple syrup until thick. Pour the cold foam on top of the horchata. Garnish with black sesame seeds and a toasted cinnamon stick! Enjoy.
