Breakfast Burrito 🍳🥓🥔

1. Make hash browns: wash + peel potatoes, grate them, and squeeze out excess moisture with a paper towel.
2. Add 1-2 tablespoons of avocado oil to a pan on medium heat.
3. Add the grated potatoes to the pan with salt + pepper. Cook until lightly golden (5-8 minutes), but not fully cooked.
4. Chop the bacon into small pieces and cook in the same pan.
5. Whisk 3 eggs in a bowl.
6. When the bacon is a little more than halfway cooked, add the whisked eggs and slowly scramble. Add in the hash browns, then the cheese.
7. Mix everything together and turn off the heat. (Key here is to create a big mixture cooked in bacon fat for ultimate flavor & thickness).
8. Heat up a tortilla.
9. Pour the mixture onto the warm tortilla and wrap it.
10. Add the wrapped burrito to a pan for grill marks.
