Brûléed Grapefruit Lambrusco Spritz

Start by bruleeing your grapefruit. I sliced 4 wheels for garnish and kept the rest of the grapefruit in tact. Brulee your slices by adding sugar to the top of the fruit and using a food torch to caramelize the sugar. Once you’ve done the wheels, you can brulee both sides of your leftover grapefruit. Once bruleed, juice it with a citrus juicer and set aside. To a glass with ice, add amaro, bruleed grapefruit juice, lambrusco and top with club soda. Garnish with 1/2 grapefruit wheel, olive oil, olives and frozen cranberries.
