CBD Raspberry Chocolate Brownies, perfect for celebrating Galentine's Day! These brownies are dairy and refined sugar-free, with an option to make them gluten-free and egg-free. Featuring a homemade raspberry jam and hemp oil for an added treat.
For the Jam: Add all jam ingredients (frozen raspberries, water, chia seeds, collagen, maple syrup) to a saucepan on medium heat. Stir until jammy looking. You can make this the night before and store it in the fridge for a thicker consistency, or make it the day of.
For the Brownies: Preheat oven to 325°F (160°C). In a bowl, add the melted and cooled coconut oil, hemp oil, coconut sugar, and maple syrup. Mix until combined. Add the cacao powder, salt, baking soda, and baking powder. Mix until creamy. One by one, fold in each egg. Add the vanilla and mix. Slowly add in the whole wheat flour and mix until the batter is thick (it has a thicker consistency because they’re cakey brownies). Fold in the chocolate chips.
Assembly: Add 3/4 of the brownie batter to a pan. Add the prepared raspberry jam on top. Add the last 1/4 of the batter to the top and gently mix it in (it won’t be pretty because the batter is cakey, but just have faith).
Bake for 22 minutes. Cool, serve, and store in the fridge.
