make !! lunch !! not !! boring !! ingredients// 1 chicken breast salt, pepper, paprika, sesame seeds 1 head romaine lettuce 4tbsp grated parm (for crisps, optional) dressing ingredients// 1/4c mayo 2tbsp olive oil 1 anchovy, smashed (optional) 1tbsp dijon mustard 1-2tbsp lemon juice 1 garlic clove, grated salt & pepper 2tbsp grated parm method// make parm crisps. grate parmesan and create dollar-coin (lol) sized medallions and throw in the air fryer or broiler for 3-5 minutes until browned. then, make your caesar dressing. to a bowl, add mayo, olive oil, smash anchovy, dijon, lemon juice (1-2 tablespoons depending on desired taste), garlic, parm and seasonings. mix. to make your chicken, slice each breast in half and place under parchment paper. pound down with a cup until flat and season with salt, pepper and paprika. add to an oiled frying pan, add your chicken. cook on 3 minutes each side, until cooked through. chop your romaine lettuce thinly and add dressing to coat. break parm crisps on top of your lettuce. cut your chicken into cubes and mix. add enough salad to a wrap where you can feasibly roll it up, and then throw it on the same frying pan as the chicken (we call this Dorado style in the bay!) to brown the tortilla. MEAL PREP: if i were meal prepping this, i’d add the chicken to the romaine and mix. then, each day, add you caesar dressing and parm crisps into that day’s salad portion and roll up into a wrap. this is tastes SO good in between two pieces of sourdough toast. #chickencaesarwrap #chickencaesar #lunchinspo
