CREAMY TAHINI MAC N CHEESIE 🧀

Cook your pasta in salted water until al dente. Reserve about 1 cup of pasta water and drain. To a saucepan over medium heat, add butter and melt. Whisk in the flour and cook until golden. Whisk the milk (e.g., almond milk) into the flour mixture until thickened. Reduce heat to low and whisk in Greek yogurt, tahini, cheddar cheese, Parmesan cheese, and salt until smooth and creamy. When the cheese sauce is creamy, remove from heat and add lemon juice. Pour pasta into the sauce and mix until coated. If needed, add reserved pasta water to thin the consistency. Add more salt, pepper, and fresh parsley to taste.
