EASY PUMPKIN MAC N CHEESE

1. Cook your pasta according to package directions.
2. Add butter to a cast iron pan. When hot, add sage. Let the butter brown, then remove from heat and set aside.
3. Add pumpkin puree, milk, broth, garlic powder, salt, and pepper to a saucepan over medium heat. Stir and bring to a soft boil, then reduce heat to a simmer.
4. Add 1 1/4 cups shredded cheese of choice (the recipe suggests 3/4 cup sharp cheddar and 1/2 cup raw cheddar) and mix until the cheese is melted into the sauce. Incorporate the brown butter to the cheese sauce by mixing.
5. Preheat oven to 400°F.
6. Add cooked pasta to a small baking dish and add greek yogurt, then mix.
7. Add the cheese sauce to the pasta and mix well.
8. Spread shredded gouda over the top, followed by toasted breadcrumbs.
9. Bake the mac for about 10 minutes and broil for 2-4 minutes to get a crispy top.
