Frozen Coffee with Toasted Marshmallow Rim and Chocolate
25 mins prepServes 1
Being an adult means ice cream whenever you want and this is the perfect snack at any time of day to spark some serious joy. All thanks to Halo Top. That’s what I’m calling The Halo Effect!
melt your chocolate on the stovetop by chopping it up and adding it to a saucepan with coconut oil, stirring until melted. coat a glass of choice with the chocolate and set in the freezer.
then, make your marshmallow meringue. to a saucepan, add brown sugar, honey, maple syrup, water and cinnamon. bring to a boil and then simmer on low until the sugar dissolves. meanwhile, whisk your two egg whites on high speed with the cream of tartar until peaks form. then, mixer on medium speed, slowly pour your sugar mixture into the egg whites. increase the mixer speed to high and mix for about 5 minutes until you have a white, glossy meringue. the peaks should be very stiff! add to a piping bag and set aside to make your frozen coffee.
add 12oz coffee, 2 big scoops Halo Top light ice cream, 1 frozen banana and ice to a blender. blend until smooth. if you need to loosen it a bit, add milk of choice until you’ve reached your desired consistency.
to serve: remove your chilled glass from the freezer and pour frozen coffee into it. then, pipe the rim with your marshmallow. optional, but i love toasting mine! and lastly, throw a huge dollop of Halo Top light ice cream on top and dust with cocoa powder. ENJOY!
