Say hello to the easiest + most delicious appetizer hitting your thanksgiving table. Legit takes 30 minutes, offering a sweet, savory, crunchy + oh so flavorful bite perfect for a small gathering.
Preheat oven to 475°F. Slice sweet potatoes into medallions. Spread olive oil on a baking sheet and lay medallions down. With a spoon, lightly coat one side of the medallions with honey. Slide potatoes into the oven and cook one side for about 15-20 minutes, or until the side facing down is dark brown. Flip medallions and cook for another 10-15 minutes. Pull out the medallions and let cool. Take goat cheese out of the fridge so it softens. While potatoes are cooking, chop walnuts + cranberries and mix together. Chop fresh mint. Set aside. When potatoes are mostly cooled, spread cheese over the top of each medallion. Sprinkle the walnut/cranberry mixture over the top, then sprinkle mint over the top. Optionally, drizzle more honey on top at the end. Enjoy!
