A personal lava cake recipe for 1 or 2 people, made in about 15 minutes with 7 ingredients. This recipe is a dairy-free and gluten-free adaptation of a New York Times Cooking recipe, celebrating the classic chocolate and orange flavor combination.
Preheat oven to 400°F.
01. Add sugar, eggs, salt, and vanilla to a bowl. Whisk vigorously for about 2 minutes until light and frothy.
02. Melt your chocolate. I put mine in the microwave with a big spoonful of coconut oil for two 30-second intervals. Add melted chocolate to the egg mixture and whisk.
03. Add orange zest and mix.
04. Slowly add in flour until smooth.
05. Coat a ramekin (or a mug or mini pie dish) with coconut oil and some coconut sugar. Add the batter to the dish. You can add some more zest on top if you want, too.
06. Bake for approximately 12 minutes. The outside should be firm and the inside should look gooey. Do not overbake!
07. Cool for a few minutes and then set upside down on a plate and lift up! Add an orange slice and powdered sugar on top.
