Lemongrass & Ginger Coconut Cooler

Start by making your lemongrass & ginger simple syrup:

Peel a few lemongrass stalks and chop into 5-6 pieces (~2 inch pieces). Like you would with garlic, slam down on them with a knife to release their fragrance. Slice 2 large knobs of ginger. Add sugar and water to a sauce pan and bring to a boil. Reduce heat to a simmer and add lemongrass + ginger. Simmer for 15-20 minutes, stirring occasionally. Drain and let cool. This will last in the fridge for a month or two!

Make your drink:

To a shaker add simple syrup, lime juice, coconut milk and water (or an NA spirit!). Shake well with ice until chilled. Pour about halfway into your drinking glass filled with ice. Then, top the rest off with sparkling water. Garnish your glass with citrus salt and a lemongrass stalk! Enjoy!
