Non-alcoholic Coconut Pineapple Margarita

For the rim: Coat your glass rim with maple syrup (or other syrup) and add a mixture of salt, sugar, and coconut flakes. Place the glass in the freezer while you prepare the drink.

For the margarita: Add pineapple juice, coconut milk (using the cream on top of the can), maple syrup, and lime juice to a mixer with ice. Shake well until thoroughly chilled.

Assemble: Remove the glass from the freezer and add fresh ice. Pour the margarita mixture into the glass. Top off with a splash of sparkling water (less is more!). Garnish with a lime slice and enjoy!

To dehydrate limes (optional garnish): Add lime slices to an oven on a cooling rack and bake at 170°F for 6 hours, rotating every 2 hours.
