Parchment Paper Halibut w/ Mango Salsa
15 mins prepServes 1
The ultimate spring or summer dinner for weeknights or dinner parties, featuring halibut cooked in parchment paper and topped with a fresh mango salsa. This recipe highlights ingredients like mangoes and bell peppers for gut health.
To a large sheet of parchment paper, add arugula, orange slices, and lemon slices. Place the fresh halibut fish on top. Season the fish with salt and pepper, then add fennel on top. Drizzle everything with olive oil and add more lemon slices on top. Close the parchment paper by folding it into a half-moon shape. (Tutorials can be found on YouTube for this technique.) While the fish cooks, make your salsa by adding chopped mango, bell pepper, jalapeño, shallot, and cilantro to a bowl with lime juice. Cook the fish at 400°F (200°C) for 20 minutes. Once cooked, open the parchment paper and top the fish with the fresh mango salsa. Enjoy!
