salsa verde chili chicken soup 🌶️

Add olive oil to a pot. Once hot, add onion, garlic, and zucchini. Stir until cooked down and the onion is translucent. Then, nestle chicken onto the bottom of the pan, searing each side for about 2-3 minutes. Add salsa verde, chiles, beans, and hominy. Then, add bone broth, enough to cover everything, adjusting for desired brothiness. Add salt, pepper, and cumin and mix. Bring to a boil and then simmer on the stove for about 30-40 minutes, until the chicken is cooked through. Remove the chicken from the pot and shred. Add the shredded chicken back into the soup and simmer for about 5 minutes more, tasting the broth and adding more spices as needed. Dish up and top with garnishes of your choice.
