Salted Celery Shrub Spritz

3-7 days before serving the shrub, add celery and water to a blender. Blend until smooth, then strain twice to remove sediment. You should have about 1 cup of celery juice. Bring your apple cider vinegar to a simmer on the stove. Meanwhile, peel the limes, remove the white pith, and cut the lime flesh into pieces. In a heat-proof container, add lime peels, lime pieces, mint, and sugar. Muddle until well mixed and the sugar is moist. Add celery juice, warm apple cider vinegar, and salt. Stir until well incorporated. Cover and place in the fridge for at least 3 days and up to 10 days. When ready, remove the shrub from the fridge and strain into a jar. To make your drink, add 2 oz shrub, 1 oz pineapple juice, and top with sparkling water. Pineapple juice is optional; the shrub with sparkling water alone is also delicious. Enjoy!
