Instructions

First, prepare the homemade peanut sauce by combining the peanut butter, warm water, soy sauce, rice vinegar, garlic powder, and maple syrup. Taste as you go and adjust to your preference. Next, combine all the salad ingredients (romaine lettuce, carrots, cucumber, bell pepper, purple cabbage, avocado, green mango, fresh basil, fresh mint, vermicelli rice noodles, and your choice of chopped tofu or shrimp) in a large bowl. Pour the prepared peanut dressing over the salad and mix everything together. Serve with fresh lime.
