Strawberry Rhubarb French Martini

To make the simple syrup: chop one stalk of rhubarb and about 3-4 strawberries. Add them to a sauce pan with 1/2 cup water and 1/2 cup cane sugar. Bring to a boil and once boiling, reduce the heat to a simmer. Simmer for 20 minutes and then strain and cool. (Tip: don’t waste the poached rhubarb/strawberry! Have it on top of yogurt for dessert!)

To make the martini: combine syrup, pineapple juice, lime juice, and mint into your shaker. Muddle. Then, add NA vodka (optional), aquafaba (optional) and additional mint into the shaker. Dry shake for 30 seconds (if using aquafaba), and then add ice and shake. Pour into a chilled martini or coupe glass and top with grated dehydrated strawberry and mint.

*If you choose not to add NA vodka or aquafaba, it's recommended to double or triple the recipe as it’ll be difficult to get enough liquid. Alternatively, use the same measurements & omit the aquafaba and top with sparkling water to make it a spritz.
