Strawberry & Rose Shrub

To make rose water (if using powder): Whisk 1 tsp rose powder with ⅓ cup water (by hand or with an electric whisk) until fully dissolved.

Method for Shrub:

1. Add the lemon peel and sugar to a glass jar. Muddle until the sugar has absorbed the oils from the peel and looks like wet sand. Let this sit anywhere from 30 minutes to overnight to deepen the citrus flavor.
2. Add the strawberries and rose water to the jar. Muddle again until the strawberries are mostly broken down and juicy (about 70% of juices released).
3. Pour in the apple cider vinegar, stir to combine, then seal the jar and store in the fridge for about 5 days, giving it a gentle shake once a day. For good flavor, you can let it sit for at least 24 hours, but the longer it sits, the better.
4. After it’s infused, strain for a smooth shrub.

To make 1 drink:

1. Add ice to a chilled glass.
2. Pour in 2 oz of the shrub.
3. Top with tonic water (or plain sparkling water with a bit of lemon juice).
4. Garnish with a strawberry and enjoy. You can also add alcohol of choice, such as gin.
