An easy homemade Sunday sauce featuring fresh garden tomatoes, simmered with onion, garlic, jalapeño, and spices, then blended smooth and finished with fresh basil. Perfect for pasta!
Start by making an 'X' at the bottom of each tomato. Boil them in water for 2 minutes, then transfer to ice water. Peel the tomatoes and remove their cores. Add the peeled tomatoes (and their juices), onion (cut into two pieces for easy removal later), spices (salt, black pepper, oregano), minced garlic, and diced jalapeño to a saucepan. Bring the mixture to a boil, then reduce heat and simmer for about 2 hours. After 2 hours, remove the onion and use an immersion blender to blend the sauce until smooth. Right before adding the pasta, mix in the fresh basil. Then add pasta and serve. Enjoy!
