Sunrise Granita Mocktail

In a shallow baking dish, combine the orange juice, pineapple juice, and ginger soda. Place the dish in the freezer. After about 45 minutes, or once the mixture begins to freeze around the edges, use a fork to scrape the icy edges towards the center. Return to the freezer. Continue scraping the mixture every 45 minutes for about 3-4 hours, or until the entire mixture is transformed into fluffy, icy crystals. Scoop the ice crystals into a chilled glass and, upon serving, drizzle a few tablespoons of the grenadine over the top to create a sunrise effect. Garnish with orange or lime wheels and maraschino cherries, then enjoy!
