Tahini Sour Mocktail/Cocktail

Garnish your glass with maple syrup and sesame seeds, then place it in the freezer to chill. Prepare your tahini by ensuring it's smooth; if not, blend it with an immersion blender and any oils on top of the jar. In a cocktail shaker, combine tahini, maple syrup, gin (or water for the NA version), fresh lemon juice, and mint. Next, add an egg white (or aquafaba). Dry shake for 30 seconds. Add a handful of ice cubes to the shaker and shake vigorously for about 15-20 seconds. Strain the cocktail mixture from the shaker into the prepared chilled glass. Drizzle a small amount of olive oil on top of the cocktail, then sprinkle a pinch of black pepper over the olive oil to add a savory depth. Cheers!
