A monster veggie sandwich featuring zucchini, squash, homemade green goddess sauce, goat cheese, pecans, hot honey, and microgreens. Proof that eating vegetables doesn't have to be boring!
1. Make your green goddess sauce by blending fresh basil, chives, dill, plain yogurt, garlic, salt, pepper, olive oil, and lemon juice together until smooth. If the sauce is too thick for your liking, add warm water very slowly until you reach your desired consistency.
2. Thinly slice the zucchini and squash. A mandolin works best for very thin slices, but a knife can also be used.
3. Sauté the sliced zucchini and squash in a saucepan with a bit of olive oil, salt, and pepper until they are soft.
4. Toast your bread on a cast iron skillet until golden brown.
5. To assemble the sandwich, spread the green goddess sauce on one side of the toasted bread, then layer the sautéed zucchini and squash on top.
6. On the other side of the toasted bread, spread the herbed goat cheese.
7. Grate 4 pecans over the goat cheese.
8. Drizzle hot honey over the ingredients and add a generous handful of microgreens.
9. Put the two halves of the sandwich together and enjoy!
