An easy yet fancy meal, this grilled toast features warm sourdough, blistered cherry tomatoes, garlic, and your choice of cheese, drizzled with spicy olive oil and garnished with fresh herbs.
Preheat oven to 300°F (150°C). Wrap the demi sourdough baguette in foil and place it in the oven to warm up. While the baguette is warming, heat extra virgin olive oil in a cast iron or regular pan with red pepper flakes and the unpeeled 1/2 garlic head. Once the oil is very hot, carefully add the cherry tomatoes one by one. Keep an eye on the tomatoes, turning them once or twice until they develop a nice browning or "blistering." Once the tomatoes are done, remove them and the garlic from the pan and set them aside in a bowl. Keep the heat on the pan. Remove the warm bread from the oven and cut it into 4 pieces. Place the bread face down in the hot oil to grill until golden. While the bread cooks, peel and chop the roasted garlic. Take the grilled bread off the pan, add the chopped garlic, and spread your cheese of choice. Top the cheese bread with the blistered tomatoes. Drizzle the oil remaining in the pan over the bread. Garnish with fresh herbs.
