Vanilla Blood Orange Shrub Spritz

Wash blood oranges. Peel their skin off and add citrus peels to a large heat-proof jar. Then, remove the blood orange from the remaining citrus and set aside. Add vanilla and sugar in the jar. Muddle until the sugar is well incorporated with the citrus peels + vanilla. Then, add the blood orange and muddle again until fully incorporated. Place your apple cider vinegar on the stove to simmer (optional but may quicken the process) and once it’s warm, add it to the jar. Mix until well incorporated. Close jar and store in the fridge for 24 hours up to 1 week. The longer it sits, the better - 4 days works great! Once you’re ready to use, strain the shrub into a mason jar. To make a spritz: Add ice to a glass and pour ~2oz of shrub over ice. Top off with sparkling water and enjoy! To make it a cocktail: Add your favorite spirit (mezcal is suggested) to the shrub and sparkling water.
