Whipped Goat Cheese Stuffed Dates

Preheat your oven to 425°F (220°C). Drizzle maple syrup and coconut sugar on the bacon, then cook in the oven until crispy. Meanwhile, whip room temperature goat cheese by hand or in a mixer until smooth. Add in some fresh thyme and rosemary to the whipped goat cheese. Place the whipped cheese into a plastic bag and cut a corner to create a piping bag. Chop the pistachios and the crispy bacon. Pit the dates, then pipe the whipped goat cheese into each date. Sprinkle the chopped pistachios and bacon over the dates, and drizzle with honey. Garnish with some extra fresh thyme on top and enjoy!
