Unlearning perfectionism by making things at home that look good online. This recipe is sooo delicious and also incredibly approachable. Make it for your next dinner party or brunch for one! The options are endless. Inspired by @misinewyork.
First, prepare your gremolata. Chop 1/2 cup parsley and mix it with 2 cloves of minced garlic and the zest of 1 lemon. Add 1-2 tablespoons of olive oil and mix everything together. Next, whip your ricotta. Using a hand mixer (or a food processor), whip the ricotta with some salt and olive oil to taste. For super fluffy ricotta, you can optionally add a dash of heavy cream while whipping. Once whipped, transfer your ricotta to a Ziploc baggie and snip off one of the corner edges. Make your toast as desired. To assemble, add the whipped ricotta to your toast, then drizzle with more olive oil, and top with the prepared gremolata. Finish with an extra sprinkle of salt and pepper. Enjoy!
