Yuca & Mojo

Peel and chop your yuca into chunks. You can also buy pre-peeled frozen yuca! Add water and salt to a pot and place yuca inside. Bring to a boil. Then, reduce to a simmer and cover the pot. Cook until the yuca are fork tender - be careful not to overcook or they’ll fall apart! While yuca is cooking, add oil to a saucepan on medium heat. Once hot, add in sliced onion and cook until fragrant (5ish min), then add garlic and stir for about 30 seconds. Reduce the heat and whisk in orange + lime juice. Remove from heat and add salt + pepper, to taste. Once the yuca has finished cooking, drain and place into a clean bowl. At this time, a lot of your yuca will have split and you might want to grab the core (looks like a twine rope) and take them out. Otherwise, you can do that while you’re eating. Pour your mojo all over the yuca and mix. Cover and let rest for about 15 minutes so that the yuca soaks up the mojo. ENJOY!
